The origin of bubble tea is said to have originated at Taichung's Chun Shui Tang teahouse, where the idea of serving Chinese tea cold was influenced by the Japanese custom of drinking iced coffee. During a normal staff meeting, Ms. Lin Hsiu Hui, Chun Shui Tang's product development manager, became restless in her creative spirit. She thought, on a whim, that adding Taiwanese fen yuan, a sweet tapioca pudding, would improve her Assam iced tea. The resulting mixture turned out to be so exceptionally tasty that it was added to the menu and immediately became the teahouse's best-selling item.

The popularity of this beverage at one teahouse quickly led to concessions across Taiwan incorporating tapioca pearls and various fruit flavors into their iced teas, which is how bubble tea as we know it today got its start!
